The Bahian cuisine is considered the best of Brazil and is based mainly on seafood (shrimps, fish) and the famous “azeite de dendê” (dendê oil) which is extracted from an African palm that was carried to Brazil by Portuguese during colonial period. The local cuisine is very influenced by its African roots, most meals are prepared with ingredients whose origin is African (nuts, coconut and ferociously strong peppers, etc). Besides, many names of meals have also African roots like “caruru”(okra stew), “moqueca”, “acarajé”, “vatapá”,etc.

The “acarajé” is without doubt one of the most representative Bahian meals; it is a deep fried bread made with mashed beans. The mash is fried in “azeite de dendê” and is served with shrimps. A variant of the “acarajé” is the abará, which is the same mash of beans, but it is boiled in a banana leaf.

The “Abará” is a tamale-like wrap which is made with bean paste, onions and “azeite de dendê”, all these ingredients are cooked inside a banana leaf and are accompanied with dried shrimp sauce and ginger.

The Moqueca is another symbol of the Bahian cuisine; this popular dish is made with several kinds of seafood stewed in coconut milk, cilantro, onion, tomato and lime juice.

Another famous Bahian food is the “vatapá” which is a delicious past made with shrimp, peanuts, coconut milk, cashews and of course “azeite de dendê”.

The “Bobó de camarão” is a delicious stew made with shrimp, onion, tomatoes, cilantro, coconut milk, cassava paste and again azeite de dendê. It is very similar to “Moqueca”

The Bahian desserts are also very delicious, most of them are made of pure sugar, this fact is logic; since Brazil is one of the greatest sugar producer. It highlights the “quindim” a small cake made with coconuts, vanilla and prunes. Another popular dessert is the “cocada” which is a little cluster made of coconut and sugar. Besides, there is also an good dessert named “Baba de Moça”, which is prepared with egg yolks, coconut milk and sugar syrup; whose name in English would be “girl drool”.
